You have to love a recipe that promises a no-fuss healthy dinner, and one that looks great to boot. This recipe came from Eating Well, and have to admit that I am not sure how I stumbled upon it but glad I did.
This is a snap to put together. While the recipe called for chorizo, I substituted pepperoni since we had some left over from a pizza I made earlier in the week. Simply heat this with the chard in a cast iron skillet for a few minutes. Once the chard is wilted stir in frozen hash browns potatoes and pat this mixture until it is flat. On top of this pour a mixture of eggs, scallions, and Parmesan cheese.
Unlike a quiche with its long cooking times, this is ready in just a few minutes – which includes finishing it off under the broiler to brown the top. The result is a tasty meal-in-a-dish that isn’t camera shy!
