Dinner the other night was pretty simple – chicken tenders coated in cornmeal and lightly fried, served with a tomato & basil salad and some steamed broccoli.The star of the meal was the raspberry mustard that went with the chicken. While this too was simple – crushed raspberries, whole grain mustard and honey – it added both nice color and flavor to the meal. While intended for the chicken, I used this for the broccoli also as it nicely complemented the broccoli’s rather mild flavor.
What made dinner unique was that I put a little extra into the presentation. Most of our meals are served family style, but this time I employed my head chef skills and tried to artistically plate each meal, even adding a few slices of avocado and a raspberry. Believe I was successful as Anthony remarked “Nicely plated” when he came to the table. Probably not many 17-year old kids say that when sitting down to dinner, but then again most don’t need to wait while their dad takes pictures before they can eat!
