You have to try this. For a simple dish these chipotle pepper & cheddar cheese stuffed broiled avocados were among the tastiest things I have made. Period. Enough said?
The key to this is to find avocados that are just ripe enough but not over-ripe. Look for ones that give a little bit when squeezed but not so soft that they dent under your fingertips. For you sports fans out there use this as a guide: a baseball is too firm, a racquetball too soft and a tennis ball just right. Got that?
Once you have the avocados home this dish takes only a few minutes to put together. For 4 servings, simply mince 1-2 chipotle chilies in adobo and add it to about ¼ cup of shredded cheddar cheese and then add the juice from a lime. Halve the avocados and fill them with the cheese & chili mixture and broil for 3-5 minutes. If you like it hot I would add 2 chilies, otherwise stick with 1.
Unless you just don’t like avocado, I guarantee you will love this dish!
