For a guy who once claimed he doesn’t make cake, I sure seem to be baking a lot cakes lately. Guess a combination of my sweet tooth and being a sucker for cake glamour shots that I see on other blogs gets me running to the kitchen every time.
My latest cake baking experiment was with a chocolate bundt cake from the Brown Eyed Baker food blog. I am on her email list, so when this cake showed up in my inbox I knew I had to make it show up on my table. Even though I have an aforementioned sweet tooth, I have to admit that the chocolate cake with chocolate icing she made looked like too much for me. I opted to go with a simple powdered sugar coating, but of course did serve this with vanilla ice cream. (My wife doesn’t understand this, but I believe it is a law that chocolate cake must be served with vanilla ice cream.)
The fact that I am now ready and willing to take on all cake recipes is another testament to my evolution as a cooking dad. That said, I still don’t feel especially proficient at cakes. As those of you who saw my Facebook post the other day post know, I am an incredibly messy baker. By the time the cake was in the oven I had used every measuring cup, spoon and mixing bowl in the house. The sink was overflowing with dirty dishes, the counter was covered in flour, sugar and egg yolk and the floor was a mess…so much so that it took almost the entire baking time to clean things up. Part of the problem is clumsiness with the mixer. We don’t have a stand mixer, so use a hand mixer instead and when doing so I seem to jettison stuff out of the bowl with alarming regularity. Hmm … maybe I need to take a ‘mixing skills’ class?
Despite my trials and tribulations in putting this together the end result was delicious. Rich and moist, this cake was a winner in my book and well worth the mess in the kitchen!
