I love the Internet. You can find the answer to any question within a few clicks (and since it is on the Internet it must be true).
In the latest case I wanted to find a nice side for a meal I was making. A Google search of “side dish to serve with empanadas” brought me several good ideas. The one I settled on was a Corn, Tomato and Avocado Salad from the Food Network. This combined a pint of cherry tomatoes, a couple of ripe avocados, corn cut off the cob and some mozzarella cheese with a dressing of olive oil, cilantro, lime juice and lime zest. This was indeed the perfect complement to my empanadas, and something that would be great to bring to a summer pot luck.
