What’s wrong with this picture?
Nothing technical this time – and I admit it is a bit subtle to the casual observer – but something is definitely missing. To understand I need to back up a step…
The weather has turned cooler and it seemed a good time to make a nice pot of soup. Given that Anthony had a cross country meet that day and my in-laws were coming for dinner, throwing something into the crockpot and letting it cook all day seemed like a good plan. I found an interesting recipe for a chicken enchilada soup and had it going so it would be ready for dinner around 6:00.
So far, so good.
I was going to make a nice looking dessert that night, but as often seems to happen to me it was taking far longer to put together than I anticipated. As I was fiddling with dessert in the kitchen, my family was sitting at the table ready for dinner. Kath jumped in to shred the chicken thighs in the soup and then ladled it out and got it on the table. When I finally put the dessert in the oven and joined them I totally spaced out on the fact that the soup recipe suggested serving it with a nice topping of shredded cheddar, fresh cilantro and a dollop of sour cream. If you look back at the picture you don’t see cheese, cilantro or that dollop of sour cream now do you?
Seems like I have made this mistake more than once and have let to learn my lesson in meal planning. Oh well…guess more evolution is needed before I get it right all the time!
