Sometimes I feel like I am in a rut when it comes to side dishes, and as a result we tend to eat a lot of green salads. Nothing wrong with that, but it does get kind of boring. Coming to my rescue last week was a blog post on Simply Recipes for a cucumber and grape salad.
This appealed to me in a number of ways – it was different than my usual fare, was easy to make, and I had everything needed already on hand. While easy to make, note that you do need to allot some time to salt the cucumbers to draw out the moisture. The recipe also calls for some minced garlic added to the oil and vinegar dressing. I think I would skip that next time, as we found it provided too much of a garlic punch (and this from a family that loves garlic).
This is one that I would recommend if you’re looking for a new way to use cucumbers and want a nice side dish for a summer table.
