I was looking for something to make for lunch with my mother-in-law the other day and came across a recipe for “Dad’s Fish Stew”. How could an Evolved Dad not jump right on that?
This was on the Simply Recipe’s blog, so knew it was going to be good (as everything I’ve made from there has fantastic). As promised in the recipe this was very easy to put together and very tasty. The prep work for this is a breeze – cut up some onion, tomato, garlic, parsley and the fish. I enjoy this prep work when I have my occasional lunch with my mother-in-law, as she will sit at the counter and chat while I cut up the ingredients for whatever I happen to me making. For a short period of time life slows down a little bit.
The recipe calls for halibut, cod, sole, red snapper or sea bass fillets, but these were all a bit pricy for my taste at my local Shaw’s. I bought haddock instead and it was excellent. The other choices may be a bit firmer and hold up in the stew slightly better, but I found the haddock did the job quite well. Since the author is from California it seemed only right to serve this with some sourdough bread … and of course a glass of Chardonnay!
