My father-in-law turned 88 the other day and we hadn’t had a chance to celebrate his birthday until yesterday. I wanted to make something special for the occasion, so turned to EatingWell.com for ideas. Knowing he likes salmon I found a recipe for Garlic Roasted Salmon & Brussels Sprouts that was described as being “…simple enough for a weeknight meal yet sophisticated enough to serve to company.” They had me at simple*.
The recipe called for skinned salmon filets. I wasn’t exactly sure how to approach that, so turned to YouTube to help me out. I have to admit that I get excited about little things sometimes, and finding a bunch of ‘how to’ videos on skinning salmon ranks right up there. I find it amazing that whenever I don’t know how to perform some cooking task someone has already thought to make a video for me. The salmon came out nice and moist, while the roasted garlic and Brussels Sprouts were very tender. Served this with couscous on the side, and of course cake and ice cream for dessert.
