Pi Day is celebrated each March 14th by millions…well thousands…well hundreds (of mostly math teachers) each year. I love it since it is a day with a built in excuse to bake a pie.
This year I decided to try another crack at a coconut custard pie with a caramelized topping. We make coconut custard pie around here quite frequently, but the caramelized top is the different twist. The recipe I used was from AllRecipes.com, but modified it slightly to use the entire bag of coconut. I had made this pie earlier this year and ended up burning the topping, so was especially careful this time – and am proud to say it came out perfectly this time.
Now if you’ll excuse me, I have to go watch Life of Pi.
