It was HOT last week in Worcester. It was way too hot to do much cooking, and even when I did there was little energy left over to blog. When it is that hot, cool salads are on order and I found a nice one that was worth sharing.
This Hawaiian Carrot Salad was just the thing to go with some Hawaiian Ribs I was making in the slow cooker. Making the ribs in the crock pot kept the kitchen from getting too hot, and pairing it with a chilled salad of carrots, pineapple and coconut was perfect. This would be great side dish to serve with most any meal, but I would especially recommend it with dishes like ham or chicken teriyaki on the grill (especially if you add grilled pineapple to the mix). In addition to being extremely easy to make, this side has the benefit of looking fantastic on your plate.
