“We’re having farro for dinner tonight”
“What? We’re having ferret?”
OK, so it might not have gone exactly like that…
A little while ago we bought some farro – a whole-grain wheat product that looks a bit like barley but has a crunchy, nuttier flavor – and I’ve now made a few different dishes with it. Far and away my favorite of these was a lemony farro dish mixed with arugula and topped with seared scallops that I made when my in-laws were over and my sister was visiting.
This was very easy to make, simply boil the farro as you would rice, then toss it with a dressing of lemon juice and zest along with garlic. Once cool, combine the farro with arugula and top with the seared scallops. Note that scallops are a bit pricy for my taste, but they were excellent with this dish. A nice substitute would be to marinate shrimp with lemon juice and cook them on the grill for a delicious alternative.
If you haven’t added farro to your dinner table I’d recommend trying it, but be prepared for some strange conversations!
