My wife threw down the gauntlet the other day. Well, maybe that is a bit dramatic. She mentioned we were eating too much meat and asked me to add some vegetarian meals to the rotation. I decided to then make that a challenge and see if I can make a week’s worth of meatless entrees.
Monday was an easy one, as I had recently seen a recipe for Spicy Peanut Noodles from the Food & Wine website I wanted to try. The peanut sauce is made from peanut butter blended with sugar, soy sauce, sesame oil, garlic, ginger and crushed red pepper. I doubled the crushed pepper since we like dishes on the hot and spicy side, which was a good call. This was then paired with a side of Roasted Asparagus with Balsamic Vinegar.
Kathy was surprised by how tasty the noodles were. Despite growing up in an Italian family in Rochester she isn’t a huge pasta fan (other than with her mom’s sauce), but found the flavors in this dish worked very well together. I liked the fact that it was easy to put together, which is always a big plus in my book.
Thumbs up for day one of Meatless Meals Week. Now on to find something for tomorrow. Suggestions anyone?
