Since yesterday was Meatloaf Monday it was time to look for a variation on the trusty old meatloaf theme.  I had seen a picture of a mac ‘n cheese meatloaf that my wife’s cousin Jim had posted on Facebook so decided to try to duplicate that.  What I quickly discovered is that there are a huge number of recipes out there that fit the bill.  A number of them were layered creations that looked great but involved more work than I wanted.  Others added bacon to the mix, and those most definitely did interest me.  In the end I riffed off two different recipes to make my own creation.

The main meatloaf recipe came from Food.com.  When putting this together it seemed like it was too moist and there were too many elbows.  Once the loaf was cooked however the macaroni didn’t dominate and it was a nice consistency, so looks like the mixture was right on.  The recipes I had seen for the bacon wrapping alternated, with some placing the bacon under the ketchup or BBQ sauce and others on top.  I split the difference when I discovered one where you cook the bacon wrapped meatloaf for ½ hour naked, then add the sauce and cook for another ½ hour.  This worked OK, but I like my bacon a bit crispier than this produced.  Next time I’m going to try this by putting the sauce on top of the loaf and then wrapping with bacon.

All in all the end result wasn’t exactly the home run I was expecting, but it was definitely a solid single.

Bacon-wrapped Mac ‘n Cheese Meatloaf

Ingredients:Bacon-wrapped meatloaf

Meatloaf:

  • 4 ounces cooked macaroni
  • 1 lb ground beef
  • 1/2 cup fine soft bread crumbs
  • 1/2 cup skim milk
  • 2 eggs, slightly beaten
  • 1/2 cup onion, chopped (about ½ a baseball sized onion)
  • 2 Tbsp green peppers, chopped (could probably do without these)
  • 1/3 cup reduced-fat cheddar cheese, grated
  • Salt & Pepper to taste

Topping:

  • 6-8 strips of bacon
  • 1 cup ketchup
  • ¼ cup mustard
  • 1 Tbsp Worcestershire
  • 1 Tbsp brown sugar

Instructions:

  1. Cook macaroni according to directions on package. Drain and let cool.
  2. Mix together pasta, hamburger, bread crumbs, milk, eggs, onion, green pepper, cheese, salt and pepper. Shape into loaf.
  3. Cut 4-5 strips of bacon in half.  Layer these across the top of the loaf.
  4. Wrap one full piece of bacon around each side and one end of the loaf.
  5. Bake at 350 degrees F for 30 minutes.
  6. Mix remaining ingredients for the topping and spread on top of meatloaf.
  7. Bake for another 30 minutes.

      I served this with a simple arugula salad and cornbread. Arugula is our “go to” green for most salads.
