Might As Well Face It…

Turkey Burgers, Beet & Goat Cheese Salad, Sliced PotatoI’m addicted to blogging*.

Guess I realized this yesterday when we were going to have burgers on the grill and I wondered what I could make that was ‘blog worthy’.  No simple burgers, salad and a baked potato for me.  What did I make instead?

  • Herbed Turkey Burgers:   A very (make that very, very) nice burger that uses parsley, sage, rosemary and thyme along with onion and garlic to punch them up.  I would do a whole Scarborough Fair thing, but already did that with an earlier post this year.  Note that these take a little extra time to put together because you need to sauté the onion and garlic first and let it cool before making your burgers, but the flavor is fantastic.
  • Beet & Goat Cheese Salad with Candied Pecans: We love the taste of beets and goat cheese – and everyone loves candied pecans so this was a winner.  The recipe calls for candied walnuts, but we have some slight walnut allergies here so I substituted pecans straight up.  Of course with this you need to set aside an hour+ to get the beets ready so plan accordingly.
  • Sliced Baked Potato:  These taste great and really look terrific on your plate, which it something I have been conscious of a lot lately.  To make, thinly slice a potato almost all the way through, drizzle with butter, olive oil, salt and pepper, then bake at 425 for about 40 min.  A good trick when slicing the potatoes is to set them in a large serving spoon and slice until you hit the edges of the spoon, which prevents you from going all the way through.  Had made this once before with big Russet potatoes but found they took too long to bake.  This time I used smaller white potatoes which worked well.

Certainly my goal in this was a good dinner, but admit that part of it was making sure that whatever I made was something I could blog about.  While I might have a problem (and sometimes wonder if there is a 12 step program for addicted bloggers), my family isn’t complaining about the obsession with cooking that I have developed.
