Sometimes entire dinner ideas just fall into my lap. This was true last week when an email from All Recipes highlighted a Spicy Garlic Lime Chicken, and right after that featured a nice looking Carrot Rice dish. Paraphrasing one of my favorite Maurice Sendak books:

Mix that garlic chicken and rice I did! In an odd way this was a fun dinner to put together. Neither of these dishes was a ton of work and both tasted great. Anthony made a comment that they each contributed equally to the meal, something that isn’t always the case. Often when I make something it is either the super main dish or amazing side dish that carries the day, so it was nice when both played a part in my chicken and rice feast.
These two dishes came together side-by-side, each in their own frying pan on the stove. I started the rice cooking first, then got going on the garlic chicken. This was a snap to make – simply rub it with a space mix (salt, black pepper, cayenne, paprika, garlic powder, onion powder, thyme and parsley), and then brown both sides in olive oil and butter. You then add more garlic powder and lime juice in the last 5 minutes. While the chicken is cooking you can work on the rest of the rice. First brown some onion, then add ginger and carrots and let it steam for a bit. At the end add some cayenne pepper and peanuts and then stir in the rice. Delicious!
