We had a fantastic spicy vegetable, quinoa and peanut soup the other day. According to the Eating Well recipe this is a modern take on a traditional Bolivian soup called Sopa de Mani. For us this was perfect for a quick late dinner on a night when we had an early evening commitment and weren’t going to be able to eat until almost 9:00. At that time of night you are still hungry, but don’t want anything too heavy. I made this earlier in the day and simply heated it up when we got home, since the ~1 hour cook time was too long to tackle at that time of night.
The peanut flavor in this soup comes from peanut butter – and is another recipe I have loved that uses good old Jif* for something other than a PB&J sandwich**. I threw in some diced chicken to add a bit more protein to the soup and served with crusty bread. Thought we would have leftovers for lunch the next day but we devoured it all that night!
