Rhubarb-Ginger Crumble

Rhubarb Ginger CrumbleI have consumed more than my share of apple crisp in the fall, but typically when apple season ends so does my obsession with desserts topped by a sugar, butter and flour crumble.   When a beautiful picture of Rhubarb-Ginger Crumble arrived in my email this week the urge for that buttery topping came right back.

It might be a bit early in the season in New England for rhubarb as I had to go to three different stores to find some.  With rhubarb in hand the rest of the dessert is a snap however – simply mix it with some fresh ginger and a liberal amount of sugar, then top with a crumble of more sugar, flour and butter.  Probably not the healthiest dessert ever…but hey, it’s dessert!

For those of you missing that apple crisp experience this is a recipe that is most definitely worth trying.
