Today was the last day of school for Anthony. Since they only had a half day today – and with his school’s schedule that means that got out at 10:45 – Kath suggested I do an end of year bunch. Nice of her huh?
Actually I enjoyed putting this together, and having some of Anthony’s friends over is always great. For this occasion I made a tried and true Raspberry Strata that is put together the night before, and a crock pot breakfast casserole that I tried for the first time. I have made – and blogged about –the strata earlier this year. It comes from the Harbor Breeze Inn in Harwich and is a nice rich dish with raspberry preserves, cream cheese, brown sugar and the eggs working together to make this a melt-in-your-mouth delight. The casserole combined eggs, sausage, onion, frozen hash browns, and cheese to offset the sweetness of the strata. I liked the flavor and convenience of being able to throw this into the crock pot with minimal fuss, which left the oven free for the strata.
Bunch was rounded out by bacon (a requirement for the teenage breakfast table) and a nice fruit bowl. My audience liked the presentation of the fruit, with melon balls combined with raspberries, strawberries and blueberries served in half a watermelon. While everything was great, I think the watermelon bowl was the favorite based on the fact it disappeared rather quickly during brunch.
