So why is this dish named ‘Sexy Fish Stew’? To be honest, other than to peak your interest and get you to read the blog post, I don’t really know. The origin of this dish is the Foodwishes blog, one of my favorite places to be entertained while looking for great things to eat. I highly encourage you to check out the site sometime and view his videos – in addition to providing great recipes and easy to follow cooking tips, each comes with a guarantee of at least one corny joke (and for those of you who know me this is just the kind of joke I love).
Back to the stew…
Regardless of what you call it this stew it is amazing. For us there were two things that made it a definite winner:
- The broth was to die for. The combination of leeks, shallots, fennel, cayenne pepper, wine, chicken broth – along with butter and cream – made for a very smooth and rich base for the fish and potatoes. Quite honestly I could have just eaten the broth and been happy.
- Logistically it worked. I know that sounds odd, but for our life you need to have meals that taste good and can come together at odd hours. In this case I put together the broth and potatoes in the afternoon, then threw it into the refrigerator for later. When we got home from an early evening event I was able to quickly warm this up, add the fish and have it on the table within 15 minutes.
