My friend Jan recently posted a picture of a two ingredient pumpkin cake on Facebook. Two ingredients? Really? Yep, two ingredients. All you need is a yellow cake mix and pumpkin purée. The simple glaze did add three other ingredients – confectioners’ sugar, apple cider and pumpkin pie spice.
This made a very moist cake with a great texture and wonderful pumpkin flavor. I loved that fact that the pumpkin purée added all the necessary liquid to this and you don’t need to add eggs or oil. I did find that this bordered on being too sweet (which is hard to do since I have a huge sweet tooth). Think it was the glaze that put it over the edge for me, so if I make this again will cut that back in the future (maybe cutting this in half or even thirds).
Oh course regardless of how sweet it is* to start, you need to serve this (and every cake in my opinion) with vanilla ice cream. My wife and I disagree about this point, but this is probably one of the few areas where I know I’m right!
* I thought “How Sweet It Is” was a James Taylor song (with vocals from Carly Simon), but discovered in my research that Marvin Gaye first recorded this in the mid-60’s. You learn something new every day.
