Sweet Tooth

I love all things sweet – cookies, cake, ice cream, pie, chocolate-frosted donuts (but don’t tell my wife the last one).  Because of this we try not to have too many sweets around the house or I will just wolf them down.

Recently my sister and brother-in-law were visiting and I wanted some dessert.  I hadn’t planned ahead and the weather was lousy that night so a trip to the store to pick something up was out of the question.   That was a problem because I am not very skilled at looking in the cupboards and whipping something up without a plan (and an accompanying trip to Shaw’s).  That night however I saw that we had:

  • Rice
  • Milk
  • Butter
  • Cinnamon
  • Sugar

…and BAM, I had rice pudding.

Slow Cooker Rice Pudding

The particular recipe I used was for a slow cooker.  This was good for us in that we had some time and I liked that the recipe was no fuss – just dump all the ingredients in the crock pot, stir and don’t worry about it. I had since seen a few other simple stove top rice pudding variants that I may try.  Suggestions anyone?

    This reminds me of something my mother used to make via our neighbors south of the border…arroz con leche, or rice with milk. I grew up calling it rice cereal. The same ingredients, cooked on the stovetop with a cereal-esque consistency rather than thick like your pudding.

      One thing I like about this recipe is that you didn’t need to watch it. Once everything was in the crock pot you were done. Recipes like that work for me.

    Ever since I saw you post this, I wanted to try it. I cooked this today. It was excellent and easy!! This might have to be my new stable when going to a potluck. 8^)
