I love simple. And tasty. The recipe I found on Eat, Live, Run for Crock Pot Tex-Mex Chicken Lettuce Wraps was both. Winner, winner, chicken dinner.
All you need is a few chicken breasts, taco seasoning, onion, jalapeno and salsa. Rub the taco seasoning on the chicken and throw it into the crock pot. Cut up the onion and jalapeno then drop them on top of the chicken. Pour the salsa on top and cook on low for 5 hours.
This resulted is a nice moist chicken mixture that was delicious in either a soft taco shell or wrapped in a piece of Boston lettuce (we tried both). Served this with dirty rice and baked beans…and I’m not ashamed to admit that both came from packages. The rice was Zatarain’s reduced sodium black beans and rice (very good), while the beans were Goya’s Fiesta Baked Beans with Chipotle (excellent). Hey I said I like simple. And tasty.
