Tofu Tuesday?

After Monday’s meal of Bacon-wrapped Mac ‘n Cheese Meatloaf we needed something on the healthier side to counter-balance the amount of fat and calories we had consumed.   Whenever I feel that I need to purge, I go to the Cooking Light website and start poking around.   Sometimes when doing so I have nothing in mind and hope that a photo will spark an interest, but yesterday seemed like a soup day which narrowed the search somewhat.  Being fans of Thai food – and of hot foods – the Fiery Tofu and Coconut Curry Soup seemed to be just what I was looking for.

We did already have a number of the ingredients on hand, and as an added benefit I was able to clean out the refrigerator a bit when making this.  There was jar of red curry paste that I emptied as well as used up the last of a bag of carrots.  Bonus points for me!  Sometimes it feels like we either throw too much stuff out or have jars tucked in the back of the fridge forever.  Using what you’ve got is most definitely an acquired skill and one I can say I am getting better at (but still have a long way to go).  I ran out at lunch time and picked up the few extra things I needed, which unfortunately required a 2nd stop since my local Shaw’s didn’t have fresh ginger root.  I have grown more and more frustrated with Shaw’s, but they are just so close and so convenient that I keep stumbling back there.

End to end time for this is about 1 ½ hours, but more would be better. The recipe calls for the basic soup stock (garlic, curry paste, brown sugar, coconut milk, vegetable broth, lime juice, ginger, and soy sauce) to simmer about an hour before adding carrots, green beans and tofu.  Like a lot of soups this would have benefited from more simmering time. It did have a nice pungent aroma, but the flavor was weaker than I expected.  Of course we like it hot so keep that in mind.  I am looking forward to the leftovers for lunch today as I suspect it will be much spicier today.
