For some unknown reason this song popped into my head as I sat down to write. The truth is that I don’t really bake, at least when it comes to things like cakes. When a birthday rolls around at our house we usually rely on our friend Stacey to whip up a cake.
So why then on New Year’s day did I have a million ingredients out on the counter trying to bake a cake for after dinner that night? Maybe I was trying to prove to myself how much I had evolved as a cook. I had wanted a dessert with pumpkin in it, so the day before found a recipe for a Glazed Chocolate-Pumpkin Bundt Cake on the Eating Well website. As an added bonus it was touted as being (somewhat) healthy. So being a fan of My Big Fat Greek Wedding I had to make it – it was a bundt after all!
The problem was that even after running to the store for the ingredients, I still was missing a few things. I hadn’t wanted to buy buttermilk or pastry flour to use just for this recipe, so now was looking for substitutes. For the pastry flour substitute however I didn’t have everything needed, so found I had to make substitutes for the substitute. (For you sports fans out there this means I was going very far down the bench.) I have to admit that eventually I was confusing myself about what I needed to mix together – maybe I would have been better off with the pastry flour, a different recipe or a boxed cake mix!
In the end the ingredients came together and the cake went into the oven. I really should have taken a picture of the sink once I was done, as I had used what seemed like every cup measure, measuring spoon and mixing bowl we own. Had to run the dishwasher just to clean the dishes I used to make one cake!
Luckily Stacey had joined us for dinner so I pressed her into service to make a simple glaze. As the cake turned out a little dry for my taste – likely a problem with my buttermilk substitution – the glaze was my favorite part.
